The manufacturing process of tea

Picking tea leaves

The process of harvesting green tea leaves is called a collection. This work traditionally done by women. They pass between the rows of tea bushes, picking the top two leaves and bud unopened. Collection of leaves is carried out every seven to ten days.

Withering

Once the leaves on the trucks delivered to the factory, they are laid out for withering, located on the upper floors, allowing the flow of air to circulate freely between the leaves. In the rainy season requires an additional process control withering, which feeds warm air powerful electric fans. Withering process takes 8-10 hours.

Twist

Dried leaves are fed into machines for twisting, located on the first floor. In them there is an influence on the cellular structure of the leaves and the extracted juices and enzymes which impart the characteristic aroma of tea. The result of this stage is to obtain a twisted leaves.

Fermentation

The next step is known as "fermentation" or "oxidation". Twisted tea leaves are again spread out on racks in a cool and humid atmosphere, which for nearly three hours gives them a coppery brown color due to the absorption of oxygen.

Drying

Fermentation finishes at a stage when the tea is passed slowly through the chamber with hot air. This process is called drying. Now the green leaves were reduced in size by about a quarter of its original size, and found the familiar black color. In the production of green tea minuetsya oxidation process, and leaves freshly tested drying or steam or by heating the container in which they are placed.

Sort

The final step is the production, sorting, or "dropout", where tea is divided into various grades, depending on the size of the leaf tea. This is accomplished by passing the dried tea leaves through a vibrating mesh. These varieties have little impact on the quality of tea, but very important in the process of sequential mixing of the product for sale to a potential buyer.
